Flowering
It takes place in July nowadays, since mainly agricultural blooms are available. The spontaneous sunflower blooms until September.
Origin
Helianthus annus flower nectar (about 80% pollen) and other plant species in non-majority quantities. The sunflower is an annual herbaceous plant, 1 or 2 meters high, with yellow flowers gathered in numerous flower heads in wild varieties. Native to Peru, it is now acclimatized in Europe.
Production method
Honey extraction from honeycombs (not containing brood) with closed cells, therefore with humidity ≤ 18%: removal, uncapping, centrifugation and decantation of honey, then potting. Intact packaging without rust spots, bearing labels showing the indications required by the law in force, including the identification of the production batch. No GMOs are present and no ionizing treatments are applied.

Aspects
It spontaneously crystallizes quickly and with variable results, depending on water content and conditions, but almost always with crystals that are difficult to dissolve given the high glucose content.
Visual Examination
Very characteristic color, with bright yellow tones: liquid honey is amber in color with yellow shades, while when it crystallizes it takes on an intense cream color.
Olfactory Examination
Medium intensity smell, rich in references of pollen and wax, leaves and damp, oily straw, reminiscent of a preserve of green tomatoes or apricots.
Taste Examination
Intense and sweet taste, characteristic as it confirms the many olfactory perceptions, sometimes fruity. Slightly to fairly persistent.

Contraindications
Product abuse (more than 60 g per day) is not recommended. Allergy sufferers with high allergy occurrences (in particular hay allergy to Graminaceae, Cupressaceae, Betulaceae, Salicaceae, Fagaceae, etc.) should avoid the intake of any hive product, including honey, due to potential allergenic pollen contamination. Keep out of the reach children under the age of 3.
Recommendations for use
It is the most used honey in the confectionery sector where it gives sweetness without giving up a trace of itself. Given the richness of smell and taste sensations, it is best served with cheese with an equally strong and soft character: aged Asiago and Taleggio, with buttery or herbaceous flavors respectively, often with a taste of toasted hazelnuts. Traditional Medicine gives it diuretic, stimulating, anti-fever and digestive properties.

It fears heat and humidity. Store in a cool dry place, away from direct light.
