Origin
Sugar secretions of sucking insects (sugary substance released by aphids > 40%), especially Psyllidae family which feed on sap or other liquids on live parts of various plants; also nectar of other plants in non-majority quantities. Insects of this family are associated with plants belonging to a wide taxonomic range. The orders of Annonales and Asterales and Leguminous woody Legumes are particularly frequent among host plants. However, the most important species in Italy are associated with the Pomoideae and with the pear tree in particular.
Production method
Honey extraction from honeycombs (not containing brood) with closed cells, therefore with humidity ≤ 18%: removal, uncapping, centrifugation and decantation of honey, then potting. Intact packaging without rust spots, bearing labels showing the indications required by the law in force, including the identification of the production batch. No GMOs are present and no ionizing treatments are applied.

Aspects
It remains liquid for a long time, it may become turbid due to the presence of crystals but it hardly crystallizes completely.
Visual Examination
Color from dark amber to brick, almost black.
Olfactory Examination
Medium intensity smell and characteristic, very rich: balsamic, wood, resin, smoked and dull fireplace or burnt wood, wet dry leaves, also with references to animal connotations; also fruity, with fragrances of caramel, malt, dried apricots.
Taste Examination
Slightly sweet, slightly to reasonably sour. Smell reminiscent of syrup and dates or panna cotta, fig jam, slightly savory. Quite persistent.

Contraindications
Product abuse (more than 60 g per day) is not recommended. Allergy sufferers with high allergy occurrences (in particular hay allergy to Graminaceae, Cupressaceae, Betulaceae, Salicaceae, Fagaceae, etc.) should avoid the intake of any hive product, including honey, due to potential allergenic pollen contamination. Keep out of the reach children under the age of 3.
Recommendations for use
The richness of smells and flavors goes well with cheese just as the various types of Pecorino present on the national territory. Its mineral-rich composition makes it an invigorating and toning product.
Storage
It fears heat and humidity. Store in a cool dry place, away from direct light.
