Origin
It is obtained by aging our Organic Acacia honey in virgin French oak barrels.
Production method
Once our Acacia honey is harvested, we put the purest of it in oak barrels, leave it for nine months, often making some storage to extrapolate as many tannins as possible from the honey itself. The final result is honey which differs greatly in appearance, smell and taste from the classic Acacia honey.

Visual Examination
PHYSICAL STATE: It remains liquid for a long time, may become turbid due to the formation of crystals, but never crystallizes completely.
COLOR: Amber, with tones tending to ruby red.
Olfactory Examination
ODOR INTENSITY: Medium/high intensity.
ODOR DESCRIPTION: Unique. Reminiscent of cooked wine, leather and freshly burned tobacco.
Taste Examination
TASTE: Welcoming and decisive
AROMA DESCRIPTION: Particularly characteristic because the combination of wood with honey gives balsamic fragrances. Surprisingly sweet aftertaste

Storage
It fears heat and humidity. Store in a dry place with temperatures between 15 and 28 degrees. Keep away from direct light.
Food parings
It is excellent when served with fresh cheese, but also of medium and long aging. Perfect for sweetening meat, or as such with mixed salad. Unique on Fiordilatte ice cream. Definitely the most versatile honey.
